Last week I ate again ratatouille! This classic French stew full of veggies like eggplant, zucchini, tomato, onion and garlic. Actually a perfect dish for all leftovers in the 'no waste month. The French eat it hot or cold, often with a baguette. Though it is also very nice with some quinoa, rice, polenta or pasta. Despite being a super simple recipe, this ratatouille is one of my favorite comfort foods. myon Well, that should not be missed here. Needed for 2: Preparation time: 25 min Good splash of olive oil 1 eggplant 1 red onion 1 clove garlic, myon finely sliced 1 zucchini 1 bell pepper myon 10 cherry tomatoes (halved) 2 tsp dried oregano 1 scoop of good quality mozzarella salt / pepper
Put a large skillet on medium-high heat, providing a good splash of olive oil. Cut the eggplant into approximately equal parts (as you want) and add it to the pan. Season with a pinch of salt.
