Christmas recipes you fly last week probably ears but this yummy cupcake I wanted to show you this one. The cranberries and orange are a perfect gavros combination in this yummy gooey and airy cupcakes coconut flour, which you certainly will score points with it during the holidays.
Ingredients - 12 cupcakes 1 package of cake mix Neutraliscious Paleo2Go * 4 eggs 100ml milk 80g melted almond coconut juice and zest of 1 organic orange gavros 150g cranberries 1 teaspoon vanilla extract
* The ingredients of this cake mix are coconut flour, palm sugar, cinnamon, baking powder and Celtic sea salt. The cake mix is purchased on Paleo2Go and Pure Mieke but you can of course make the cake without mix. Use - instead of the mix - 90 gr coconut flour, 4 to 6 tbsp coconut blossom sugar, a pinch of Celtic sea salt and 1 tsp baking powder or baking soda wise toe
Preheat oven to 175 degrees and grease a cupcake form coconut oil (or use paper cupcake tins). Mix the eggs (with a hand mixer) until foamy. Add the almond milk, vanilla extract, orange juice and orange zest and mix briefly by the eggs. Add the melted coconut oil, mix well. Add the cake mix (or substitute ingredients) and mix to a smooth batter. Spoon finally the cranberries into the batter. Spoon the batter into the cupcakevormpjes and bake the cupcakes in about 25 minutes until brown and tender.
