McCargo, who is best known for his show "Big Daddy's House," will appear at noon and 2 p.m. Jan. 11 on the stage located in the complex's Main Exhibit Hall. He will prepare a spicy beef salad with peppers, onions and herbs as well as a bacon and pesto pasta salad.
In porter 2003, McCargo opened a restaurant in Camden, N.J., called McCargo's Restaurant. He also has served as the executive chef of Catering at Thomas Jefferson University Hospital in Philadelphia, and attended Atlantic Cape Community College's Academy of Culinary Arts.
Other chefs scheduled to appear at the PA Preferred's Culinary Connection cooking stage include: 2 p.m., Jan. 10: John Moeller , former White House Chef and Author of "Dining at the White House—From the President's Table to Yours": Cream of Mushroom Soup; Grilled Shiitake Mushrooms, Jonah Crabmeat and Herbs, and Roasted Red Pepper Sauce 3 p.m. Jan. 12: Walter Staib, Owner at the City Tavern, Philadelphia, PA & Host of the Emmy Award winning "A Taste of History, " French Lentil Salad Noon, Jan. 13: First Lady Susan Corbett and Barry Crumlich, executive chef at the Pennsylvania Governor's Residence, Maple Rosemary Lacquered Pork Tender with a Cherry Red Wine Jus and a Root Vegetable and Butternut Squash Hash 11 a.m., Jan. 14: Dawson Flinchbaugh, co-owner at Flinchy's Steak and Seafood House in Lower Allen Twp., Bolognese Sauce Ala' Flinchy's With Mediterranean Relish
